Third, be prepared for backsliding. You may go great guns for awhile and then one night you just dont feel like cooking. Or the thought of what is on the menu just doesnt strike your fancy. As long as it is the exception and not the rule, give yourself a break. Also realize that there will be times of crisis in your life that may necessitate breaking your meal routine for a period of time. The last thing that you want during a turbulent time is add anxiety by feeling that you cant depart from the schedule. If for a week or more you decide that your meals will consist of whatever you can get your hands on, then so be it. After the emergency has passed, resume your meal routine.

If the thought of planning and implementing healthier meals is still overwhelming, put the new plan into place over a period of time it doesnt have to start tomorrow. Maybe it takes two weeks to identify your meal-inhibitors, two more weeks to formulate the rotating menu, and one additional week to produce the grocery list. That is fine! As long as you are making progress, you are on track.

A lot of retirees searching means of bringing in additional money are wondering about all the ads they see promising that you can make thousands from filling out surveys online.

Online surveys are simply the Internet version of the market research forums that companies have conducted for decades. As a consumer, you pull up the survey form which asks you to share your opinions of a series of questions about a proposed product or service.

But survey participants indicate that they would be willing to pay up to $177 for the product. The company thereby avoids a devastating pricing mistake costing them possibly millions of dollars.

Some, but not all, companies are willing to pay the survey participant for their time in filling out the survey forms. Determining which companies are willing to pay is what let's a number of people earn a decent amount of income from filling out survey forms.

Can you make three or four thousand dollars a month or more filling out surveys? Unlikely, for a number of reasons.

Firstly, product manufacturers don't want just anyone's opinion. They want the opinion of people who are potential users of their product. If you don't fall into their demographics, you are not of much use to them. Secondly, after a while, it can become pretty tedious and boring to sit at your computer all day, locate forms that pay cash, and fill them out. Thirdly, although their are a number of companies that pay cash for filling out forms, in most cases we're not talking about amounts of $75 or $100. And lastly, many companies have a limit on how many times one person can fill out a survey for their company within a specified time limit. In other words, you might fill out a survey for company X but are not allowed to fill in another survey for company X until 3 months have expired. So it's unlikely that you are going to end up making a three figure income or buying a Lexus with your earned money.

Having said that, however, it is possible to work at it part time and bring in some good spending money for not a lot of effort. On the low side, you might bring in enough money to treat yourself and your partner to dinner a few times a month. Or, if you are very efficient in finding companies that pay, you could make a few hundred a month of extra income. There are stories of people making thousands of month, but until verified, it's best to take those stories with a grain of salt.

But for seniors or retired persons that have a little free time on their hand and don't mind sitting at their computers, this might be something that they want to take a look at.

The wildlife of the Galapagos Islands has fascinated us since naturalist Charles Darwin brought them to the attention of the world through his groundbreaking voyage of discovery in the early 1800s. His research in the archipelago formed the basis of what was to become his revolutionary theory of natural selection.
In later years, this group of islands off the coast of Ecuador has become a popular place for eco-tourism. There are few places on Earth that offer such insight into the machinations of our natural world and, for wildlife enthusiasts, Galapagos holidays can be one of the most memorable experiences of their lives.

Among the unique endemic species, the rare and endangered Galapagos Penguin is one of the most sought-after sightings. In 2017, after several decades of population decline, researchers have seen a spike in the birds' breeding, and it appears that there's some good news at last for the most endangered penguin species on the planet and thats also good news for wildlife lovers who visit the region on Galapagos holidays.

A Breeding Bonanza

The reason for the recent breeding bonanza has by no means been an overnight success. Many of the nests the birds had used for the past 40 years have been destroyed by flooding or overtaken by Marine Iguanas. So, in 2010, a research team from the University of Washington began to work on a project that encompassed the construction of 120 artificial penguin nests, with a goal of providing as many breeding opportunities as possible for the species.

The nests were created by digging tunnels into the lava of the landscape, or by stacking plate lava. These nests have been nicknamed "penguin condos" and have been built on three of the archipelago's islands: Isabela, Bartolom and Fernandina. The researchers' goal was to ensure that during times of abundant food availability (when breeding is most likely to occur), the birds had access to a safe nesting site in which to protect their eggs and keep them cool.

The nests are monitored twice a year and in the most recent visit by researchers, greater numbers of juvenile penguins were sighted and, in fact, they accounted for around 45% of the entire population.

Current Events

The upswing in breeding is directly correlated to the weather event of La Nia, which brings cooler, nutrient-rich currents to the oceans surrounding the archipelago. In the past years of El Nio events (which bring slower and warmer currents, creating a dearth of food sources), the consequences for the penguin population have been devastating. It's estimated that there are less than half as many today as in the pre-El Nio years of 1972-73 and 1982-83.

By providing the means for the species to take advantage of the favourable nesting conditions, the artificial nests have played a vital role in this population regeneration. With the expectation of another La Nia in the spring of 2018, it's hoped that this breeding windfall will continue and boost numbers even further. The Galapagos Conservancy has supported the programme since 2013, and the body recognises the valuable work of this dedicated group of researchers. Their long-term goal is to increase the population to such a point that it can withstand adverse climatic fluctuations, and representatives will return to the islands in February 2018 to check on the nests and share their findings.

The Privilege of Experience

For wildlife enthusiasts who visit the region on Galapagos holidays, it remains a privilege and a memorable experience to see the species in its natural habitat. In years to come, the population may regain its prevalence of decades past proving that in some cases, human intervention can be positive rather than harmful to the world's wildlife.

Gluten Free Baking, A Journey into New Territory

Gluten-Free foods are taking their place in the world these days. We are all becoming more aware of gluten, gluten intolerance, celiac (or coeliac) disease, and what this means for so many people. While I am not gluten intolerant, I often cook and bake for functions, locally. Last year I was asked to provide little treats for a Princess Party, put on by the Dacotah Prairie Museum. Accompanied by a queen, little girls from tots to teens were invited, to learn about the lives of real princesses. They were taught how to wave properly, and curtsey.

Little girls hear the word princess and go dreamy-eyed. The program was sold out. I made lots of little treats, but found out one of the little princesses and her queen were gluten intolerant, and could not partake of many of the little treats. This was an intolerable state of affairs. I decided I needed to learn about this disease, be aware of what was involved, and provide alternatives that would be tasty and exciting.

Over the past year, I have been trying out different gluten-free flour mixtures, and making lots of goodies, mainly from my own normal recipes, converted by simply substituting gluten-free flour and adding xanthan gum. In the main, they have been a whopping success. In my honest opinion, as someone who has been baking for 42 years, some of the cakes, fruit or nut loaves turn out more moist and tender than when made with wheat flour, a very happy discovery, without a doubt. The queen mentioned above, works at the museum, so I took an afternoon to talk with this young woman and learn more about what was involved. I also had baked one of my favorite coffeecake recipes, gluten-free and took it for her and the museum staff to try. They all loved it, moist and tender and full of flavor. The young woman was happy with my experiment, as was I.

Another great help along the way was finding Shauna Aherns Gluten Free Girl website. I have studied her site extensively and learned all sorts of things there. I mixed up her gluten-free flour mixture to experiment with, as well as trying out one of her bread recipes; another success. I took some of the bread for the woman at the museum to sample, as well as a slice I slathered with homemade pesto and cheese and broiled. She exclaimed, This is the best bread I have tasted since going gluten free.

This coffeecake recipe was given to me by my best friend of 54 years, and is a terrific recipe, no matter which flour you choose. This is the original recipe, for gluten-free, I substituted a gluten-free flour mixture made up of 6 cups brown rice flour, 2 cups potato starch and 1 cup tapioca starch. I used this mixture measure for measure in this recipe, and added 1 teaspoon of xanthan gum to the sifted dry ingredients. Be sure to check the labels of ingredients for hidden wheat when making this Gluten Free.

Bundt Coffeecake

1 cup unsalted butter
1 1/2 cups sugar
2 eggs
1 cup sour cream
1 teaspoon vanilla
1/2 teaspoon baking soda
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup chopped nuts; walnuts or pecans are good
2 teaspoons sugar
1/2 teaspoon cinnamon

Preheat oven to 350 degrees. Cream the butter and sugar until light. Add the eggs, sour cream and vanilla and mix well. Sift together flour, soda, baking powder and salt. Add the dry ingredients to the wet and mix well. Grease a 10-inch tube or bundt pan.

Mix together the chopped nuts, the 2 teaspoons sugar and the cinnamon. Sprinkle 1/2 of this topping into the greased pan. Put in half the batter - this requires plopping small spoonfuls of the batter into the pan as the batter is very thick. Then carefully smooth it to fill in any gaps. Tapping the pan on the countertop helps. Pour on the rest of the topping and again plop spoonfuls into the pan till all batter is used.

Bake for 1 hour, or until a knife inserted in the center comes out clean. Allow to cool on a rack for 10 minutes before removing from pan. Sprinkle powdered sugar over the cake if desired. Serves 12 to 16.

GLUTEN-FREE OPTION: Replace the flour with your preferred gluten-free flour mixture and add in 1 teaspoon xanthan gum. Mix and bake as directed. Sometimes baking is a little bit longer than normal, but since the texture and moistness is so wonderful, I can wait those few more minutes.
Try this recipe, either way, and you will not be sorry.

Keeping track creating goals - dealing with reality creates clarity and keeps me honest to myself. It keeps me accountable for my behavior - for my own choices. I don't have to share my records with anyone else. I find when I keep track, good things happen - probably because I am dealing with reality, and not with that enemy of clarity - selective memory.

An example:

I am constantly battling my weight. I'm always chasing that elusive "ten pounds" that so many of us just never seem to get around to losing. Unfortunately, that "elusive ten" sometimes balloons to twenty pounds - or even a little bit more.

You know when that happens? It happens to me when I decide I don't want to spend the time to keep track of what I eat and drink. Keeping track in this case means keeping a diary of everything I eat, with calories, fats, carbs and proteins counted, and comparing my actual intake to the goals I have set every day. I reach a point where I am convinced that I know - from past experience and from past keeping track - how much I can eat and what I can eat So why spend the time on recording what I already know?

Unfortunately, I have a pretty good case of selective memory. It's so easy to remember the good days and so easy to forget the bad days. To slip from reality into a state where I fool myself. As Ingrid Bergman once said Happiness is good health and a short memory. As an actress, she didn't have to deal with reality very few of us have that luxury.

The last time I made the decision to stop recording what I eat, I gained ten pounds in the following ninety days - ten pounds that becomes more and more difficult to shed as I get older. No big change in eating habits - no change in exercise habits - just a little bit here and a little bit there. And a selective memory that fooled me into believing I hadn't really changed my eating habits. I'm back to keeping track, and I see where those little snacks and larger portions that I kidded myself into believing would have no effect did, in fact, add weight.

If you're dealing with weight, or self development,or job performance, or any of a thousand other challenges and goals, keep track. Write down what is most important to you and then keep track of how you are progressing toward where you want to be. It doesn't have to be an involved process - keep it simple so you persist in recording. And keep it honest that's where clarity and reality start.

In my experience, and the experience of many, many successful people, keeping track in the form of goals is the most important single thing you can do to reach where you want to be.

Do it today pick out one thing in your life that you really want to change, improve or attain. Then define your goals, and then spend 10 minutes a day keeping track of your progress. It's the best 10 minute investment you can make.

Air force boot camps are basic military training courses for air force recruits that are conducted at Lackland Air Force Base in San Antonio, Texas.
